Madrid is home to world's oldest diner in the form of Sobrino de Botin which was established in 1725. It's an atmospheric place with its open kitchen with charcoal hearth, hanging copper pots, and an 18th-century tile oven for roasting the suckling pig that is the speciality of the house. The other speciality is sopa de ajo (an egg, poached in chicken broth, and laced with sherry and garlic). This is a popular tonic for local revellers in need of sustenance.
